shabu shabu adalah makanan Jepang jenis Nabemono berupa irisan sangat tipis daging sapi yang dicelup ke dalam panci khusus berisi air panas di atas meja makan, dan dilambai-lambaikan di dalam kuah untuk beberapa kali sebelum dimakan bersama saus (tare) mengandung wijen yang disebut gomadare atau ponzu.
